Enjoying basic meals
People living in the cordillera region have simple food.
• We like “wat-wat”, large pieces/chunks of pork boiled in basic soup with salt. It is usually served with rice, fried noodles (bihon), and soup.
• Vegetable sauté, a combination of meat and vegetables with garlic, onions, and tomatoes; it is also common. We call it “ginisa” and “magic sarap” MSG goes well with it.
• Legume soup is also a favorite. It is garnished with vegetable vine shoots such as mung beans, white beans, red kidney beans, and black beans. The soup is especially flavorful when accompanied by dried fish or smoked-aged meat. It is mostly enjoyed when the weather is overcast.
Simple food may look basic, but it is practical and yet contributes to daily survival. 🙂
